walnuts don’t usually count as a nut in most contexts. they occupy a different category. they’re the hardest nut to harvest, sort, and keep fresh. plus, they aren’t roasted. they’re mostly used in desserts. after that, they’re added as complements in appetizers and salads. some include them in mixed nuts, but as i said, if you buy them shelled, they break and darken easily; if you buy them in the shell, they’re hard to eat as a snack.
